Sheep wool is breathable. It can absorb moisture in a wetter environment. It retains its insulative qualities when it has absorbed this moisture, and also decreases the chances of condensation on other surfaces in your van, which is handy when you come back to the van with your wet gear after a day of skiing or hiking. It is resistant to fungal growth if you happen to live in one of those wetter environments. The wool releases the moisture back into the air when things dry out.
Wool is springy, causing it to hold is shape and loft inside the wall panels of your van, even when you drive down those gravel roads and rutted tracks. It is acoustically absorptive, muffling not only driving noises, but other types of noise from the outside.
